Bread pudding is one of our most-requested breakfasts at Alpine Bed and Breakfast, but ours probably isn’t the bread pudding you’re picturing. We make it with croissants, which gives it a lighter, airier texture than traditional dessert bread pudding. And while we make plenty of sweet versions, some of our favorites are savory.

The base is the same whether we’re making it sweet or savory. We use 3 ounces of croissant per serving, add a custard, refrigerate it overnight, and bake it in the morning until it’s puffed and set. And because all the prep happens the day before, it’s especially good for holidays, family gatherings or any morning when you’d rather spend time with your loved ones than in the kitchen.

Once you have the base, it’s really about using what sounds good, or what you already have that needs to be used up. On the sweet side, we’ve made Blueberry with Lemon Curd, Strawberry, Peach and, when the weather cools down, Pumpkin. But those are just ideas. Change the fruit, sprinkle on some streusel before baking if you like (recipe below) and top it with a simple glaze or some yogurt flavored with maple syrup or orange juice.

Savory versions are just as flexible. Ham, cooked crumbled bacon, or smoked sausage can be paired with whatever cheese you have on hand, along with green onions, herbs or other flavors that sound good to you. A drizzle of Dijon cream works especially well with ham and cheese, while hot honey takes the same bread pudding in a completely different direction.

Ham ‘n’ Cheese Bread Pudding Right Out of the Oven

That’s one reason this has become such a versatile guest favorite. Once you know the basic proportions and method, you don’t need a different recipe every time you make it. We’ve put together printable recipes for both, one sweet and one savory. Each starts with two servings baked in individual 10-ounce ramekins, with quantities for making 4 or 6 servings as well. Use them as a starting point, then make them your own.

We’ve also included our Pecan Streusel recipe. We top all of our sweet bread puddings with this nutty, salty and sweet mixture. It adds texture and enhances the flavors, but it’s also great on baked apples, fruit crumbles, cookies and more. We make it in double batches because it keeps well in the freezer, ready to use whenever we need it.
